Thyme has been a favorite dining destination since it opened its doors in June of 1998.
Thyme’s menu changes on seasonal basis, taking advantage of the best seafood and produce available. Thyme’s signature appetizer gulf shrimp with Vanilla Bean Nage and Red Wine Syrup starts any meal off right. The custom-made rotisserie cooks up some perennial favorites over a coal-and- wood burning fire, including Savory Spit Roasted Chicken, Rabbit and Pork.

Rich in architectural detail, Thyme bursts with a flavor all its own. The interior is a clever combination of history, anthropology and culture dispersed in a unique and unexpected fashion. The decor is a  mix of East Indian, modern furnishings and perfectly integrated antique market finds.

Thyme’s Private Dining Room has been the site for cocktail receptions, showers, birthday and anniversary celebrations, fund-raisers, holiday parties and business dinners.
At night, the stage is set for elegant entertaining with indirect lighting that casts a warm and subtle glow on the walls of the room. The soft color palette of the room provides the perfect canvas for custom floral arrangements. The patio accommodates an additional 150 people. It is Chicago's largest al fresco dining area and one of the most gorgeous. Chef/Owner John Bubala, 36, has been described by the press as a person who bubbles with enthusiasm as he greets guests in his Chicago restaurant. He's also a good businessman who "tells it like it is." Like his food, his cooking style can be explained by what you see is what you get. "I waited a long time before I accepted an executive chef role in a restaurant and even longer before I took on the responsibility of owning my own establishment," he notes.
John is also often seen in his restaurant. "I might come out of the kitchen to serve a guest their food or pour their wine. People don't expect the chef to do that, but I enjoy it. I like getting to know my customers. I don't want to intrude but I want them to be aware that I care about the experience they are having at Thyme."
