Valley at
the Garrison, a restaurant that focuses on seasonal ingredients from
artisanal farmers in the Hudson Valley, has opened at The Garrison in the
spot where Bill Brown's used to be. The restaurant overlooks the Hudson
River and West Point and views extend to the mountains beyond. Executive
chef Jeff Raider, who grew up in Yorktown Heights, was the chef de cuisine
at the Sea Grill in Rockefeller Center for four years. Signature dishes include roasted striped bass, steamed baby clams, vine-ripe tomatoes and parsley butter; Asian barbecued Niman Ranch pork chop with baby bok choy, peppadews and Thai basil; and spice-crusted rack of lamb with tomato confit, grilled asparagus and butter bean purée. |
